Cheeseburger Soup

Ingredients


2 pounds
Ground Beef, browned
3 stalks
Celery, sliced thin
3 carrots
Carrots, sliced thin
1 medium
Onion, sliced thin
2 tsp
Basil
3 tsp
Parsley
1 ½ tsp
Salt
2 large
Potatoes, sliced thin
2 boxes
Chicken Stock
1 quart
Half & Half
3 inch stack
American cheese slices
3 Tablespoons
Corn starch, blend with water

Directions


Brown ground beef and drain. Add sliced celery, onion, and carrot along with basil, parsley and salt. Saute for 10 minutes. Pour in chicken stock and add potato slices. Cook until vegetables are tender. Mix together cornstarch and water. Whisk into soup to thicken. Add half & half and cheese slices. Heat until cheese is melted, but do not allow to boil.
