Rhubarb Crunch

Ingredients


3 Cups
Flour
3 Cups
Brown Sugar
2 ¼ Cups
Oatmeal
1 ½ Cups
Butter, Melted
8 Cups
Rhubarb, Sliced
¼ Cup
Cornstarch
2 Cups
Sugar
2 Cups
Water
2 Tsp
Vanilla

Directions


Mix together flour, brown sugar, oats and melter butter. Press ½ of mixture in 10 x 15 glass or ceramic dish. Spread rhubarb over crust. Combine cornstarch, sugar, water and vanilla in a saucepan and cook until thick and clear stirring constantly. Pour over rhubarb. Top with remaining crumb mixture. Bake @ 350 for 1 hour.
